1-1/2 c butter, soft
1 8-oz pkg cream cheese, soft
2 c sugar
6 eggs
3 c flour
2 tsp vanilla
Cream together butter and cream cheese, beating well. Gradually add sugar, beating until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition. Add flour, beating well. Stir in vanilla. Pour batter into a greased 10-inch tube pan or 2 5×7-inch loaf pans. Bake at 325 for 1 hour 30 minutes for the tube pan, or 35 minutes for the loaf pans, or until cake tests done. Cool in pan 10 minutes, remove from pan and cool completely.
strawberry “shortcake”
1 pt strawberries, stemmed and sliced (2 cups)
1/4 c sugar
1 c whipping cream
1/2 tsp vanilla
Combine strawberries and sugar, let set. Whip cream to stiff peaks, adding vanilla toward the end. Serve strawberries over pound cake, top with whipped cream.
