Okay, so Alton uses fresh pork butt which he grinds himself, and fresh herbs instead of dried in his sausage. But since we do not eat pork, and want to use dried herbs because they are more convenient … well, the list of changes just goes on. So here is my modified version of Alton’s breakfast sausage.
1 lb ground turkey
1 small zuchinni, finely grated
1 tsp kosher salt
3/4 tsp black pepper
2 tsp brown sugar or 1 pkt stevia
1/2 tsp sage
1/2 tsp thyme
1/4 tsp rosemary
1/4 tsp nutmeg
1/4 tsp cayenne
1/4 tsp crushed red pepper
Mix all ingredients together with hands. Wrap well and freeze, or use right away.
