3/4 c honey
1/4 c butter
1/2 c dried cherries
1/2 c dried apricots, coarsely chopped
1/2 sliced almonds, toasted
1/4 c dried cranberries
1/4 c whipping cream
1 15-oz can apricot halves, drained and patted dry
Bring the butter and honey to a boil in a heavy saucepan, and remove from heat. Stir in dried fruit, almonds, and whipping cream. Stir in apricot halves. Cover and simmer on very low heat for about an hour and a half. Serve the compote over vanilla ice cream, or shortbread (without leaven), or serve in dessert dishes with cream or whipped cream.
