1 recipe mayonnaise
1/2 c finely ground parmesan cheese
1 clove garlic, minced
1/2 tsp dijon (or favorite) mustard
worcestershire sauce to taste
salt and pepper to taste
In a small food processor bowl, finely grind parmesan cheese to crumbs, remove from bowl and set aside. Mince the garlic clove, sprinkle with a little salt, and mash with a fork until it forms a paste. In the same food processor bowl, make the mayonnaise according to directions through adding the olive oil. (Wait to add the 1/2 tsp salt and pepper.) Add to the mayonnaise, the garlic paste, parmesan cheese, mustard and worcestershire sauce. Blend a few pulses to combine, then taste. Add salt to taste, and freshly ground pepper.
