2 breasts from roasted chicken, cold
2 celery ribs, diced
2 radishes, sliced very thin (optional)
2 green onions, minced
2 T fresh parsley, snipped (1 T dried)
3/4 c mayonnaise
1/4 tsp dijon mustard
juice of 1/2 lemon or 1 T lemon juice
salt and pepper to taste
Shred the cold chicken breast meat and combine with the remaining ingredients. Makes 4 cups salad.

Add 1 apple, diced, and 6 T toasted walnuts, to the chicken salad. Yum!
