2 c soy sauce or tamari
1 c pineapple juice
juice of 2 limes
1-1/2 c brown sugar
2 T dry vermouth
1 T worcestershire sauce
1 T liquid smoke
2 cloves minced garlic
1 tsp minced or ground ginger
4 c water
Mince the garlic and ginger (if using fresh); add the remaining ingredients. Simmer just to dissolve sugar. Marinate chicken or beef strips, and green and red pepper and sweet onion slices 24 hours before grilling to serve in fajitas.
Gluten restrictions: Make the marinade with tamari instead of soy sauce, and Thai Kitchen fish sauce instead of worcestershire sauce. We made the marinade on 09/27/07 with these substitutions, and my husband could not tell the difference between it and the regular marinade!
