1-1/2 c bran or bran cereal
1/2 c boiling water
1 egg
1/2 c honey
1/2 T molasses
1/2 tsp vanilla
1 c buttermilk
1/4 c vegetable oil
1-1/4 c flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
grated peel of one orange
Mix the bran and water and let stand. Beat together the egg, honey, molasses, buttermilk, and vegetable oil. Add to the bran. Sift the flour, soda, salt, cinnamon, and orange peel together and fold into the bran. (One cup of raisins, currants, dried apples, figs, or apricots may be added to the batter at this point.) Fill greased muffin cups and bake at 375 for 15-20 minutes. Makes 18 muffins.
