2-1/2 lbs sweet potatoes
2 T butter
2 T olive oil
2 T pure maple syrup
1/2 tsp cinnamon
1 tsp Emeril’s essence
juice of 1 lime
Preheat oven to 375 F. Peel potatoes and cut into 1-1/2 inch pieces. Melt the butter with the olive oil. Put the potatoes in a ziploc bag, add butter and olive oil and toss to coat. Combine the remaining ingredients, add to the ziploc and toss to coat. Arrange potatoes in an even layer on a greased cookie sheet, and bake, uncovered, for 30 to 45 minutes until tender and beginning to caramelize, stirring every 10 minutes.

Clean, peel, and cut up 1 sugar pie pumpkin into 1-1/2 inch cubes. Prepare as directed for sweet potatoes, baking 20-30 minutes until tender and beginning to caramelize, stirring every 10 minutes.
