olive oil
feta cheese + mozzarella cheese
1 head garlic
1 small eggplant
1 small zucchini
1 cubanelle or other sweet pepper
1 yellow onion, sliced
2 sweet red peppers
1 6 oz can tomato paste
1/2 c red wine
8 black olives, sliced
minced fresh rosemary
One recipe pizza dough makes two crusts. Prepare the roasted vegetables: heat the oven to 400. Slice the eggplant into 1/4 inch thick slices, and lightly sprinkle both sides of the eggplant slices with salt. Place the slices in a strainer in the sink, and let drain for 30 minutes.
While the eggplant is draining, wrap a head of garlic in foil. Slice the zucchini in half lengthwise. Oil a baking sheet, and the zucchini, cubanelle and sweet red peppers. Roast the zucchini and peppers with the garlic for 20 minutes or until soft and the skin on the peppers blisters and chars. Remove from the oven and set aside. Turn the oven from bake to broil.
Rinse eggplant to remove the excess salt, and pat each slice dry with paper towels. Quarter the slices. Arrange the eggplant slices in a single layer on the same baking sheet with half the onion slices; drizzle with olive oil. Broil 8 inches away from the heat for 6 minutes, stirring halfway in between. Remove from the oven and set aside.
Make the roasted red pepper sauce: saute the remaining onion slices with half the roasted garlic in a saucepan. Peel, seed, and chop the roasted red peppers, and add them to the pan after 4 or 5 minutes. Add 1 6 oz can tomato paste with red wine to thin; simmer until the flavors are blended. Add salt and pepper to taste and remove from heat.
To assemble the pizza. Prepare the pizza dough in an oiled pan. Remove the remaining roasted garlic cloves and mash them with a small amount of olive oil. Brush over the pizza dough. Brush on the roasted red pepper sauce, then the thinly sliced mozzarella and feta cheese. Sprinkle fresh rosemary or basil over the cheese, then top with roasted eggplant, zucchini, cubanelle pepper (seeded and chopped) and sliced black olives. Bake at 500 for 10-12 minutes or until the crust is golden brown and the pizza is bubbly.
