3-1/4 c roasted salted whole almonds
1 c sugar
3 T cinnamon
1 egg white
2 tsp vanilla
1/4 tsp salt
Combine the cinnamon and sugar in a large bowl. In another large bowl, beat the egg white till frothy, and add the vanilla and salt, mixing well to combine. Add the almonds to the egg white mixture and toss to coat thoroughly. Then add the coated almonds to the cinnamon sugar and toss to coat thoroughly. Spread out on a lightly greased cookie sheet and bake at 300 for 25 minutes, stirring after 10 minutes. Makes 3-1/4 c sugared almonds.
