1/2 c whipping cream
1 T sugar
1/2 c sour cream or creme fraiche
splash of vanilla or almond extract
6 oz kosher marshmallows, cut to mini size (3 c)
1 c clementine orange segments (~ 6 clementines)
1 c fresh pineapple, chopped
1 c fresh coconut, grated
1 c pecans, toasted and chopped pecans
1/2 c sweet cherries, pitted and halved
Whip the cream and sugar to stiff peaks; whisk in sour cream and the extract. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and chill at least 2 hours before serving. This traditional holiday salad is so heavenly with fresh fruit and freshly whipped cream instead of canned fruit and cool whip!
