1 lb ground lamb or turkey
4 green onions
1/2 tsp crushed fresh ginger
1 c frozen chopped collard or mustard greens, thawed and drained
1 egg
2 T soy sauce
1 T sesame oil
1 tsp crushed red pepper
salt and pepper to taste
wonton wrappers

peanut asian dipping sauce
Blend all ingredients (except wonton wrappers) in a food processor until chopped fine and combined. Spoon dumpling filling onto wonton wrappers. Moisten edges of wrappers to make a seal, and fold in half and seal. Steam or pan fry in coconut oil until done.

1/2 c rice or white wine vinegar
1/2 c soy sauce
1/4 c sugar
2 T sesame oil
2 green onions, thinly sliced
4 tsp grated ginger root
1/2 tsp crushed red pepper flakes
Gluten restrictions: use tamari instead of soy sauce, and rice flour wonton wrappers; I saw these in the asian section of the natural grocery store.
