1 c sugar
1-1/2 c flour
1-1/2 tsp baking powder
1-1/2 tsp baking soda
1-1/2 tsp pumpkin pie spice
1/2 tsp salt
3/4 c vegetable oil
1 15 oz can pumpkin puree
2 large eggs
1 c milk chocolate chips or chopped pecans, optional
caramel frosting or cream cheese frosting
In a large mixing bowl, combine the dry ingredients. Add the oil, pumpkin, and eggs, and whisk until evenly blended. Stir in the chocolate chips or nuts if desired. Pour the batter into a greased 9×13 inch baking pan and smooth the top. Bake at 325 for 30 minutes or until a toothpick inserted in the center comes out clean. Cool cake on wire rack, and frost with desired frosting.
