1/2 c butter, soft
1/2 c honey
2 eggs
2 or 3 ripe bananas
1 T baking powder
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp cinnamon
2 c flour
1 c granola, nuts, or chocolate chips (or a combination)
Mash bananas. Cream the butter and honey with a mixer. Beat in eggs, one at a time. Stir in bananas. Add dry ingredients, mixing just to moisten. Stir in granola, nuts, or chocolate chips. Fill greased muffin cups and bake at 350 for 18 to 20 minutes. Makes about 15 muffins. This recipe doubles well, and the muffins freeze well.
Gluten restrictions: substitute 2 c all-purpose gluten-free flour for the flour called for, and add 1/4 tsp of xanthan gum. The gluten free version turned out good!
