2 lbs ground beef
2 large onions, chopped
4 cloves garlic, minced
2 ribs celery, chopped
1 green pepper, chopped
2 roasted anaheim or poblano chilis, diced (or 2 4-oz cans, diced)
2 chipotle chiles in adobe sauce, minced
2 qts crushed tomatoes with sauce
1 to 2 c beef soup stock
1 pt cooked pinto or chili beans (optional)
4 oz bittersweet chocolate, chopped
4 T chili powder
1 T cumin
2 tsp salt and sugar
black and red cayenne pepper, to taste

Brown ground beef with onions and garlic. Put in crock pot or soup pot. Saute celery with green pepper in a little olive oil, add to pot. If using beans, add to pot. (Use 1 c dry beans, soaked in water to cover the day before for 8 to 12 hours, then rinsed well and simmered overnight until tender.) Add the remaining ingredients to the pot and cook on low all day, or simmer all afternoon on the stove.
The last time I made this chili, I had seen Bobby Flay make some on TV in which he added a secret ingredient: chocolate! So I added 4 oz of bittersweet chocolate to the pot, and yum! It added a little sweetness and a little richness that was wonderful. 🙂
