1 to 2 lbs ground beef
Emeril’s Essence to taste
black pepper
1 onion, chopped
4 cloves garlic, minced
1 T cumin
1 tsp tarragon
dash cinnamon and crushed red pepper
3 cans black beans, drained
1 can diced tomatoes
salsa to taste
Begin browning the ground beef, season with Emeril’s Essence and black pepper. Add the chopped onion and the minced garlic and brown until the beef is done. Reseason with Essence, add the spices, the black beans, tomatoes, and salsa. Serve over rice or new orleans dirty rice.
