This is the cajun rub that Dad has been putting on bbq ribs, chicken and steak before grilling, that the kids have been asking the recipe for. I got the recipe from him!
1/4 c salt
1/4 c paprika
1 T garlic powder
1 T onion powder
1 T thyme
1 T oregano
1 T pepper
1-2 tsp cayenne pepper
1 tsp ground bay leaf
Use 2-3 tsp per pound of meat when seasoning. A whole chicken will take ~2 T. This is especially good rubbed on chicken wings an hour before grilling or baking, then brushed with a sweet glaze (like red pepper jelly) the last 5 or 10 minutes of cooking.
