2 large sweet potatoes, peeled and cubed
2 T butter
1/2 tsp salt
1 chipotle chile, minced fine
1 tsp adobo sauce (from the chile can)
1/4 tsp cinnamon
Steam the potato cubes over simmering water until tender, about 20 minutes. Mash the potatoes with butter, salt, chipotle, sauce, and cinnamon. Serves 4. This recipe is a variation of Alton Brown’s.
Update: If you cannot find chipotle chiles in adobo sauce, use mock chipotles in adobo sauce.
