Here is today’s menu:
Breakfast: creamy rice pudding made with leftover brown rice from last night’s dinner (I made extra on purpose), and 3 pkts stevia in place of the 3 T honey. I did leave out the raisins, and added about a 1/2 tsp cinnamon, to make the pudding taste sweeter. Sarah, however, is having oatmeal, since she doesn’t like rice pudding. What on earth is not to like?
Snack: fruit salad, made with 1 apple, 1 c strawberries, 2 clementines, and whatever other fruit you have. We added a banana to ours also. Um, you can use other berries besides strawberries to get in your daily fiber rich. But strawberries are in season right now around here!

Lunch: the last of the cream of celery soup, and lemon chicken and leftover brown rice from last night’s dinner, with a pan sauce poured over made from cooking the lemon chicken. We needed a break from salad every day for lunch.
Check off daily liver healing and 6 oz of daily protein.
We have eaten a lot of raw celery for liver healers. Roasted asparagus would also be great as the vegetable with dinner, but we have not had it because Sarah does not like roasted asparagus. Also, if I got brave and learned how to steam fresh artichokes, to eat with lemon butter, that would also be great. I will do that for the next detox, since I have mastered mayonnaise with this one. 🙂
Snack: whole grain gluten free crackers with 1 oz dip made from mashing a head of roasted garlic into 8 oz of cream cheese.

Supper: glazed meatloaf, baked potatoes, and a salad made from 1 c baby lettuce, 1 c beet greens, and 1 c broccoli slaw. Top salad with homemade ranch dressing made with homemade mayonnaise. I have other salad dressing recipes here too if you would prefer something other than ranch. If any fruit salad is left, we will also have that with our dinner. I will probably eat that in place of my potato.
I am making the meatloaf gluten free (see instructions in recipe) and cutting the sugars called for in the glaze in half.
Check off 2 oz remaining protein, daily dark leafy greens, daily crucifer, and daily omega 3 rich fat.
Tomorrow is our juice fast day. I am going to Whole Foods today to pick up the unsweetened cranberry juice, and also to get a bag of organic lemons and oranges to make the juice blend.
