1/2 c honey
1 c molasses
1 c butter, soft
2 large eggs
5 c flour
1 T ground ginger
2 tsp cinnamon
1 tsp ground cloves
1 tsp baking powder
1/2 tsp salt
cream cheese frosting
In a large bowl beat honey, molasses, butter, and eggs until fluffy. Stir in dry ingredients until smooth. Wrap dough and refrigerate 30 minutes. Heat oven to 350 degrees. Roll out dough onto a floured surface, 1/8″ thick. Cut into shapes and bake 12-15 minutes until centers are firm and edges have started to brown. Cool and decorate with frosting, red hots, and/ or raisins.

Time for our favorite gingerbread men cookie story. We had just started making gingerbread men with this recipe when we were living on the farm in Bellvue. So the first year we were there, in honor of our newly acquired country status, we decided to do a country Christmas tree with gingerbread men cookie ornaments (just add a little more flour to the dough and be sure to make the hanging hole for the ribbon before baking). So the kids and I spent an entire day baking and decorating. Then the next day, we decorated the tree with the cookies, and it was gorgeous, with our popcorn garland and all. The house smelled just like Christmas – cinnamon and pine. That night, we had a service at church, and of course we all went. When we came home, there were little red ribbons all over the floor, and the bottom half of the tree was devoid of ornaments. What could have happened to our lovely ornaments! Then we found our new puppy, Libby. She had, naturally, eaten every cookie she could reach off the tree, LOL. Poor dog. We never left her alone with the Christmas tree again. 🙂
