4 lamb loin chops
1/4 c olive oil
1 T fresh thyme and basil, snipped
2 tsp fresh rosemary, snipped
4 cloves garlic, minced
grated peel of 1 lemon
1 tsp salt
1/4 tsp freshly ground black pepper
Several hours before grilling, combine all but the lamb chops in an 8″ square baking dish, whisk to blend thoroughly. Add the lamb chops, turning once to coat; cover and refrigerate. Turn the chops halfway through the marinating time. Preheat the grill, place lamb chops on grill over medium high heat; grill about 5 minutes per side. Chops should be nicely browned on both sides. Serves 2.
