I don’t make this anymore since we no longer eat pork. But since this was Grandpa Herzog’s favorite meal, I didn’t have the heart to take down the recipe. Use turkey ham instead!
2 c dried navy beans (1 lb)
1 turkey ham
8 c water
2 c onions, chopped
2 ribs celery, chopped
1-1/2 T garlic, minced
2 bay leaves
2 sprigs fresh thyme
2 tsp salt
1-1/2 tsp freshly ground black pepper
1/4 tsp cayenne pepper
Soak beans in cold water to cover, overnight (8 to 12 hours). Drain beans and rinse well.
To make the soup, saute the onions and garlic in coconut oil until transluscent. Add the diced turkey ham, along with the beans, bay leaves, thyme, water, salt, pepper, and cayenne. Bring soup to a boil; then reduce heat and simmer all afternoon, until the beans are tender and falling apart. Add more water if necessary, and salt and pepper if necessary. Mash some of the beans with a potato masher to thicken the soup. Delicious with hot cornbread, buttered with maple syrup. Yum! This was Grandpa Herzog’s favorite dinner, and one of Grandpa Don’s as well.
