1 clove garlic, minced
1 tsp red onion, finely minced
1 tsp carrot, grated and finely minced
1 tsp red bell pepper, finely minced
2 tsp sugar
3/4 tsp salt
3/4 tsp lemon pepper
1/8 tsp black pepper
1/8 tsp dried parsley
1 pinch ground oregano
1/4 cup vinegar
3/4 c olive oil
Mince the vegetables. Sprinkle a little salt on the minced garlic and mash with a fork into a paste. Combine the vegetables, salt, pepper, herbs, and spices with the vinegar and pulse in the small bowl of a food processor to combine. With the processor running, drizzle in the olive oil in a thin stream to blend. Makes 1 cup dressing.
