I made a homemade macaroni and cheese for my nieces and nephews which, since they cleaned their plates and asked for seconds, went over well. I found the recipe on Emeril’s website. Another great Emeril recipe!
However, Emeril has redone his website and the recipe is no longer there. So I started making the Pioneer Woman’s macaroni and cheese, and it is wonderful and creamy and cheesy. I use less flour to make the roux than she does, because my sauce always gets too thick after it is baked.
Gluten restrictions: use tinkyada brand brown rice macaroni, and brown rice flour in the cheese sauce.
