We harvested pineapples from our pineapple garden yesterday. Homegrown pineapples are nothing like the store bought.(Well, I suppose they are something like the store bought.) First, completely organic. Second, you let them ripen on the plant until they are as golden yellow outside as they are sure to be inside. None of this green pineapple business. Then the fruit is completely sweet with no tanginess, and you can eat as much as you want without your mouth burning. And, the core is just like the rest of the fruit … yes we eat the core, and save the top to start a new pineapple plant. When all the plants are mature, they produce three pineapples at a time, several times per year. The best fresh juice is equal parts pineapple juice and coconut water!
If we have any pineapple at all left over after we have eaten it fresh, here are some favorite recipes:
Roasted Pineapple Salsa
Caribbean Pineapple Marinade
Dole Pineapple Whips
Gratineed Pineapple
Fresh Pineapple Upside Down Cake
