2 lbs ground beef
1/2 onion, chopped
3 cloves garlic, minced
3/4 c salsa
1 T cilantro
1 T cumin
salt and pepper to taste
Brown the ground beef with the onion and garlic. Stir in the salsa, cilantro, cumin, and salt and pepper. Serve in tacos, taco salad, nachoes, burritoes, or quesadillas.
To make tacos:
Heat vegetarian refried beans or refried black beans until warm, season with salt and salsa. Shred lettuce or cabbage and cheddar cheese, and slice olives. Build the taco first with a layer of refried beans, then beef, cheese, guacamole, lettuce, olives, fresh tomato, restaurant- style, or mango salsa, and sour cream.
