Otherwise known as cooking day for Friday night Sabbath supper, and Saturday. It is really an excuse to stay in the air conditioning and out of the sun, ha ha ha.
- Turning the beef bacon marinating in the curing rub. That’s the first job of the day.
- Creme brulee baked, adding sugar to the top of each in preparation for torching.
- The torch lol.
- If it involves fire, Dave gets to do it!
- Torched, making a lovely caramelized shell.
- Peeling the fresh Florida mangoes for salsa.
- Mango salsa in progress. That’s Dave’s diced mangoes, and our diced cucumbers, and homegrown cherry tomatoes in the bowl so far. Working on red onion and jalapeño next …
- We have to test it to make sure it’s good lol.
- One quart mango salsa done for tomorrow’s supper!

- Pineapple juice + coconut water + ice = refreshing Florida cooler.
