12 jalapenos
8 oz cream cheese, softened
12 oz beef bacon, cut into thirds
Slice jalapenos lengthwise and scoop out the seeds and membrane to make 24 halves. Fill with cream cheese. Wrap each popper with a piece of bacon, and skewer with a toothpick through the jalapeno to prevent the bacon from unwrapping. Place on a wire rack on a baking sheet, and bake at 375 for 25 minutes or until the cheese is melty and beginning to turn golden brown in spots, and the bacon is sizzling.
