1 pkg broccoli slaw
1/2 pkg broccoli florets
1/2 pint cherry grape tomatoes
1/2 regular can black olives, sliced
3 oz craisins
1/3 c toasted almonds, pecans, or hazelnuts
4 fresh basil leaves, snipped
1 c grated cheddar cheese
1 c grated parmesan cheese
Toss salad ingredients. 2 cups of cold rice (salted and cooked in chicken broth) can also be added to make a full meal salad if desired.
lemon mustard dressing
2 T white balsamic vinegar
2 lemons, zested
juice of 1 lemon
4 tsp dijon mustard
2 tsp salt
freshly ground black pepper
1/2 c olive oil
Whisk all dressing ingredients together except for olive oil. While whisking, slowly pour in oil in a thin steady stream to emulsify. Toss the salad with the dressing a few hours before serving.
