4-5 lbs beef roast
1 recipe Caribbean pineapple marinade
Use the toughest, cheapest beef roast you can find.
If grilling: Slice the beef roast into 1-1/2″ thick slices. Marinate the beef 60 minutes in the refrigerator, then grill as normal. While the meat is grilling, cook the marinade down into a sauce.
If using the crock pot: Do not marinate the meat beforehand. Put the beef and all the marinade in the crock pot, and cook on high for 3 to 5 hours. The sauce will thicken and turn into a beautiful, tropical barbeque sauce. Shred the beef (it will be falling apart) and serve on sandwiches, or, it makes the most wonderful tacos!
