2 eggs
2 T honey
1/4 c butter, melted
2 c buttermilk
1-1/2 tsp baking powder (1 tsp for Colorado family)
1 tsp baking soda
1/2 tsp salt
1-3/4 c flour, sifted
Beat eggs. Blend honey with melted butter. Beat into eggs, beating well. Add buttermilk alternately with dry ingredients. Bake on a hot buttered griddle (I set mine to 325), using 1/4 cup measure for each pancake. Pancakes are ready to turn when bubbles appear over the top and the edges begin to look dry. Makes 24 pancakes.
banana chocolate chip pancakes
Make as directed, incorporating 2 mashed bananas and 1/2 c mini chocolate chips into the pancake batter before baking.
blueberry pancakes
Make as directed, incorporating 1-2 c fresh or frozen, thawed, and well-drained blueberries and 1/4 tsp nutmeg into the pancake batter before baking.
buttered honey syrup
Blend together 1/3 c melted butter with 1/2 c honey, until well blended. Serve warm over pancakes.
