1 c sugar
1 c brown sugar
1 c thick creme fraiche
dash of salt
2 oz unsweetened chocolate
1 tsp vanilla
2 to 3 T cream
Cook the sugars, creme fraiche, salt and chocolate over low heat until the sugars dissolve. Cover and cook for three minutes more. Uncover and cook without stirring until mixture reaches soft ball stage (240 on a candy thermometer). Immediately take the pan from the heat, and place in cold water until the bottom of the pan is lukewarm. Add vanilla and beat the frosting until it is thick. Beat in the cream, 1/2 tsp at a time, until it is of spreading consistency. Frosts one layer cake. Grandma Spoor is Grandma Miller’s mother.
