1 chocolate fudge cake mix
1-1/2 c water
2 eggs
1/2 c mayonnaise
Beat all together according to package directions. Fill 2 9″ cake pans and bake at 350 for 25-30 minutes. Cool and frost. This was Mom’s recipe.
Now for those of us staying away from pre- packaged processed food, I found a recipe in Great Grandma Spoor’s cookbook (Dad’s grandma) called Moist Chocolate Cake. It is a chocolate mayonnaise cake from scratch! Here’s the recipe:
1 c mayonnaise
1 c sugar
1 tsp vanilla
1/2 c cocoa powder
2 c flour
2 tsp baking soda
1 c hot water
Beat together mayonnaise, sugar, and vanilla. Sift together flour and cocoa powder, and stir into the batter. Then dissolve baking soda in the hot water, and slowly add to the batter, beating until well combined. Pour batter into 2 greased and floured 9-inch cake pans, and bake at 340 for 30 minutes. Or, bake in a greased and floured 9×13 pan at 340 for 40 minutes. Cool and frost.
