1 c sugar*
1/2 c milk
1/2 c butter
5 T cocoa powder
1/2 tsp vanilla
1 c grated coconut
3 c quick cooking rolled oats
In a saucepan, bring sugar, milk, and butter to a boil. Remove from heat, stir in cocoa powder until smooth, then stir in the vanilla, coconut and the oats until well mixed. Drop by teaspoonfuls onto waxed paper. Let cool – cookies will be firm in about 10 minutes. Makes 3 to 4 dozen.
*The original recipe calls for 2 c sugar, but I make it with 1 and it is plenty sweet enough for me. I like that they are not sickly sweet with the 1 c sugar.
Gluten restrictions: I use gluten free oats; they are not quick cooking, but they have turned out fine every time.
