1 pkg rice noodles, cooked, rinsed, and cooled
1/2 head napa cabbage, sliced
1/2 head purple cabbage, sliced
4 c baby spinach
1/2 to 1 sweet red pepper, sliced thin
1/2 to 1 sweet yellow pepper, sliced thin
1/2 to 1 sweet orange pepper, sliced thin
1- 2 c bean sprouts
1/2 bunch cilantro, chopped
3 green onions, sliced
1-2 cucumbers, peeled and sliced
1 c whole cashews, lightly toasted in a skillet
1 recipe asian peanut dressing
Combine all ingredients, and toss with the dressing right before serving. Yum! This is the Pioneer Woman’s recipe, although hers is with a different dressing. Her dressing is wonderful too, I just I prefer the peanut dressing. ♥
