1-1/2 lbs fresh baby spinach
1 can hearts of palm, drained and sliced, or sliced water chestnuts
1/2 small red onion, thinly sliced into rings
2 c strawberries, stemmed and sliced
1 c broken pecans
Combine the salad ingredients and toss together. Add dressing to the salad or serve on the side.
poppy seed dressing
1/3 c apple cider vinegar
1/2 small red onion, chopped
1/2 c sugar
2 T fresh lemon juice
1 tsp salt
1-1/2 T poppy seeds
1 tsp dry mustard
1/2 tsp paprika
1 c vegetable oil
Combine all dressing ingredients except oil in food processor or blender and blend to combine. With the machine runnning, slowly add the oil to emulsify the dressing. Makes 1-1/2 cups dressing.
