4 sweet potatoes
1/4 c olive oil
Emeril’s Essence to taste
Cut the sweet potatoes into ranch fries and place in a ziploc bag. Pour in the olive oil, close, and toss to coat fries evenly and thoroughly. Place in a single layer on a cookie sheet, making sure that the fries do not touch each other (if they touch they will be soggy and not crispy). Sprinkle with Emeril’s Essence, and bake at 450 for 15 minutes. Turn the fries, sprinkle with Emeril’s Essence and bake for another 10 minutes or until tender on the inside and crispy on the outside.
