4 large eggs
2 c sugar
1 c vegetable oil
1 tsp vanilla
2 c flour
1 T baking powder
1-1/2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
3 c grated carrots
1 recipe cream cheese frosting
1 c whole pecan halves
Beat eggs, sugar, oil, and vanilla together until well combined. Add dry ingredients, stirring until smooth, then gently fold in carrots. Spoon batter evenly into 2 greased and floured 9-inch round cake pans. Bake at 350 for 30-35 minutes or until cake tests done. Cool in pans on wire racks for 5 minutes, then remove from pans and cool completely. Frost cooled cake layers with cream cheese frosting, and garnish with pecan halves.
