4 chicken breasts marinated overnight in
ancho chicken marinade (chipotle copycat) or
fajita marinade
onions and peppers marinated overnight in
fajita marinade
cilantro lime rice
refried black beans
restaurant-style salsa or pico de gallo

guacamole
lettuce, cheese, sour cream
Prepare the rice, beans, and other fixings. Grill the chicken, and chop. Pan fry or roast or grill the onions and peppers. Set everything out buffet style and let everyone make their own bowls (or wraps). To make this meal low carb, leave out the rice, beans, and corn salsa. To make this meal low fat, leave out the guacamole, cheese, and sour cream. ♥
