2 c fresh pineapple, frozen
1 c coconut milk or whipping cream
1 T lime juice
1/4 powdered sugar (optional)
Combine in a blender and process until smooth. Pour into a gallon ziploc bag and freeze flat, one hour. Snip corner of bag and pipe into dessert dishes. Summer in a dish!
