2 6-oz cans tuna in water, drained
2 T lemon juice
1 small rib celery, minced
2 T red onion, minced
2 T dill pickle, minced
dash or two garlic powder
1 T parsley (or 2 T fresh, minced)
1/2 c mayonnaise
1/4 tsp dijon mustard
1/2 tsp salt or to taste
1/4 tsp pepper or to taste
Mix tuna with remaining ingredients until evenly blended. Makes about 2 cups. Try this on italian bread, with meunster cheese and tomatoes, grilled. Yum!
