2 6-oz cans tuna in water, drained
2 T balsamic vinegar
1 small rib celery, minced
2 T red onion, minced
1 c seedless red grapes, halved
1/2 c slivered almonds, toasted
1 tsp thyme (or 2 tsp fresh thyme)
1/2 c mayonnaise
1/4 tsp dijon mustard
1/2 tsp salt or to taste
1/4 tsp pepper or to taste
Combine the tuna with the rest of the ingredients until well blended. This tuna salad is wonderful on a bed of mixed baby lettuce and baby beet greens.
