I have finished going through my Grandma’ s and Dave’s Grandma’s cake and frosting recipes, and have gotten them posted. I felt compelled to get the heirloom cake, cookie, and dessert recipes posted while I had some time off over the holidays. This accounts for the plethora of cake and frosting recipes on the blog lately. I think there are 20 cake recipes in the :: cakes :: index now, of which a goodly amount are chocolate in some way, shape, or form. We love chocolate! Some are everyday, some are special occasion, and there should be enough variety for everyone to have their own favorite for their birthdays.
I have given up on trying to make cake recipes healthy or sugar- free for now. I figure if we only eat cake on birthdays and annual feast days, and avoid sugar and white flour the rest of the time, then it will kill us slower. I am trying to strike a happy balance between health and a family who does not beg me to buy the birthday cakes instead of make them, LOL.
I do use, for flour, Eagle Mills all natural All Purpose Unbleached Flour, which is a blend of white and wholegrain flours, with double the fiber per cup of other all purpose flours. I have made several moist and tender cakes with that. And I still do cut down on the sugar called for in the recipe, even cake recipes. Not all the recipes have been sugar reduced yet, though, so adjust to your own personal taste.
