pastry for a 2 crust deep dish pie (1 pastry recipe)
For every 2 apples in the pie, use:
1/4 c sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
2 T flour
I usually use 10 to 12 granny smith or macintosh apples for one 10″ deep dish pie. Peel, core, and slice apples. In a separate bowl, stir together sugar, spices, and cornstarch. Toss with apples, turn into pie shell, dot with 1 T butter. Cover with top crust, trim, flute, and cut steam vents. Brush pie with a little beaten egg, and sprinkle with sugar. Bake at 400 F for 45 minutes to 1 hour. Cool. This is my recipe.
Sugar restrictions: 10/08/09 made this reducing the sugar to 1/4 c per two apples. I had ten macintosh apples, I figured 1-1/4 c sugar for the pie, then cut that amount in half again. Used 2/3 c sugar and 10 pkts Stevia sweetener and the pie was wonderful – no one could tell it was reduced sugar at all.
