1 c brown sugar
4 T butter
1/2 tsp salt
2 T water
2 egg yolks, slightly beaten
1 banana, creamed until smooth
2 tsp lemon juice
1/4 tsp vanilla
2 c powdered sugar
1-1/2 c pecans, chopped
Combine brown sugar, butter, salt, and water in a glass bowl; heat over boiling water until sugar is dissolved. Temper beaten egg yolks with hot sugar, then return egg yolks to bowl; cooking until thick, stirring constantly. Cool completely.
When cool, beat in banana, lemon juice and vanilla. Beat in powdered sugar. Stir in pecans. Chill frosting in refrigerator 15 minutes or until spreading consistency. Fills and frosts a two or three layer cake. This recipe is from Great Grandma Spoor, Grandma Miller’s mother.
