2 T soy sauce or tamari
6 T water
1/2 c sake, sherry, or white wine
1 T sugar
1 T peeled and grated fresh ginger
2 T minced green onions
crushed red pepper to taste
4 boneless chicken breasts
Combine marinade ingredients, mix well to dissolve sugar. Remove fat from chicken and cube, placing meat in a glass pan. Pour yakitori marinade over; cover and refrigerate 1-2 hours. Heat grill or grill pan (if grilling, thread chicken cubes on skewers); pour off marinade and cook chicken until done, about 5 minutes on each side. Serve with rice and steamed broccoli and carrots.
