2-1/2 c flour
1/2 c cocoa powder
1 T baking powder
1-1/2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
3/4 c butter, soft
1-1/2 c sugar
3 eggs
2 tsp vanilla
grated peel of one orange
3/4 c buttermilk
2 c zucchini, grated
1 c walnuts, finely chopped
Combine dry ingredients and set aside. In a large bowl, beat together butter and sugar until creamy and light; beat in eggs one at a time, beating well after each addition. Stir in vanilla, orange peel, and zucchini. Stir in dry ingredients a third at a time alternately with buttermilk, beginning and ending with dry ingredients. Stir in walnuts. Pour batter in greased bundt pan. Bake at 350 for 45-60 minutes or until pick inserted in center comes out clean. Cool in pan 15 minutes, then invert onto cake platter. Drizzle with melted chocolate chips thinned with milk, cream, or orange juice. This is Great Grandma Kane’s recipe.
