2 lbs beef round steak, sliced
2 T each soy sauce and water
1 large onion, chopped
2 cloves garlic, minced
1 T sugar
1/2 tsp salt
1/4 tsp pepper
1/4 tsp ginger
1 15-oz can tomatoes
2 large green peppers, sliced into strips
1 T cornstarch
Brown the beef in hot oil, and transfer to crock pot. In the pan drippings, saute the onions and garlic, then deglaze the pan with soy sauce and water. Stir in the sugar and seasonings, and pour over the beef in the crock pot. Cover the crock pot and cook on low all day. About one hour before serving, drain a little of the tomato juice into a cup, then stir the can of tomatoes and the green peppers into the beef. Stir the cornstarch into the reserved tomato juice, and stir into the beef. Cover and continue to cook. Serve with rice.
Gluten restrictions: use tamari instead of soy sauce.
